I'm in HI right now for meetings related to some NFL business.  Anyway, I sat through hours of meeting yesterday and while the primary topic of discussion should have been "rules" related, the majority of the discussion centered around LeBron James.  The majority of people in the meeting thought the way LeBron handled this was poor.  However, everyone believed he made the right move.  Nothing too interesting to report related to potential player movement, although MV, I do understand that the Jets and Revis are quietly working on something that would make them both happy.

I had some Portuguese bean soup for lunch yesterday and I think there was Spam in it (it was actually delicious).  Also had some spicy Poi (tuna) which was also really good.  They've got me in an big SUV and the driver is a Semoan guy who played for UH (actually, for 2 years he blocked for Colt Brennan).  He's been introducing me to Island music as we shuttle between the meeting places and the hotel.

Yes, Tuna Can, I asked today and you are right.   Yesterday I had poi too (and didn't like it).  It was the spicy Poki that was so good.  Today for lunch we had something called Lau Lau, which I also didn't like.  It was some kind of meat that was steamed inside a big leaf.  About to leave for a private luau at the summer home of one of our hosts here in Oahu.  Stay thirsty bobo.

Lau Lau is not what one would select as a great dish ... It is Pork shoulder steamed with fish and salt. You can also do chicken, but I don't usually think Lau Lau when I am preparing a pork shoulder. For those of you who partake, you know that the pork shoulder is the source of so many great dishes, none of which are particularly healthy. You get lots of flavor and it is somewhat healthier than bacon.

My favorites, LFO, are (1) Chinese Roast Pork; (2) Country Style Ribs; (3) German/Polish Pork and homemade Sauerkraut; AND Pulled Pork BBQ. They all start with a nice pork shoulder (Boston Butt).

In fact, the cut has had a resurgence recently thanks to the economic climate. I find it interesting that I am discussing this (only as a  professional, of course) in a thread addressing LeBron. The guy and his friends Got MA contracts. I know a lot of people who now have "MIN" contracts.

... they also have time. Time and little dollars has a way of getting people to learn older recipes and cuts that are very very nice. I will point out that portion control is so important. I preach portion control.  Cook once, eat many.

With a good Boston Butt, (1/2 of a butt for about $7.00 on sale) you can get about 8 meals, easy. What's more, they will be stunningly good. The key to great food is to enjoy the food you prepare. A couple of tries and investing the time into the process and you are way ahead of the game. I see people spending 8 to 10 dollars for a meal at Chipotle and then they don't have time to prepare a solid dish?

That's all messed up.

We need to survive. We all can afford to economize and we all need to grow as individuals. Eating is essential to our happiness. That's why LFO doesn't like LauLau. It isn't very eciting. LFO, I just thought about another use of Pork and it goes up to my earliest youthful favorite remembrances of Hawaii, growing up. I would love Vietnamese and Korean roast pork on skewers. The smell of the grilled pork grilling away with garlic and ginger, honey and soy makes my mouth water just thinking about it. THAT'S what you do with pork shoulder! You don't wrap it up in a Ti leaf and steam it for a couple of hours in a pit.

The point is that Hawaii was a great melting pot for cuisines from around the world. Growing up there, the one thing that you learned to do was to try "stuff." Then, there was no stigma attached to having least favorites. There was so much from which to choose. The local Hawaiian dishes were, to us, like visiting the White House... locals didn't bother--unless you were Hawaiian or you happened to be visiting with a Hawaiian family.

So, back to my favorites...

Roast Pork and sauerkraut... with basketball and football season just around the corner and you guys about to park in front of the TV for 6 to 8 hour stretches, try this out.

Get a 1/2 Boston Butt, (or if you want to do this with beef, get a large Bottom Round Roast), Get a large plate and create a salt and pepper rub and season the meat. In your largest pan, sear off the meat turning the piece every 2 minutes over high heat. (Note,  before you start, get your "tools" to grapple with a piece of meat that large. You can do this on the grill, but I'm lazy. However, that may be the easiest, as you can just roll your meat down the grill. Make sure that the cooking surface is quite hot when you start.  Get yourself an inepensive bag of sauerkraut such as Willies brand or Hebrew National and put that in a pot or a slow cooker. Add in 2 large onions sliced. Do the same with a half a cabbage. THen add in a couple of apples that have been sliced up. Add more salt and pepper, caraway seed, mustard seed, some mustard for tang, and then plop the roast on top. Put the pot or set the cooker at about 200-220. Time is your friend. If you have a slow cooker, you can do it while you are at work or over night.

Your goal is to really cook the meat to at least 170 degrees and get it to the point where it almost falls apart.

Let it go for 6 to 8 hours. With about 2 hours to go, toss in some cut up raw potatoes that you season with salt and pepper.

If you think that you need moisture, just pour in some water or dead wine or beer. I forgot, you may want to start the dish with a cup of water or beer.

OK, so you are ready to pull the pot or turn off the slow cooker. You face one huge problem, what do you do with all that grease that has been rendered into the sauerkraut? Not that big of a problem... pull the meat out and put it on a platter. Then, pull out the potatoes.  (you can cook almost any root veggie in the dish, as well). What you have left is drippings, juice from the veggies and the kraut. Put a strainer over another pot or a bowl. Start spooning the miture into the strainer. When it gets down, just pour the remaining amount into your strainer. Net, press out the liquid. I have tons of tupperware. A that point, I get it all set up and stored. Rarely do I have a big meal planned when the dish has finished cooking, so it gets reserved, but NO DOUBT, you will sample with a bit of nice mustard and maybe some horseradish. Put a little salt and pepper and a bit of butter on the potatoes. THat's heaven. As long as the meat wasn't sitting in juice, it will form a nice crust.

Well, the point is, who, if they are by themselves will eat "that much food?" That's why God invented the freezer. OR, my favorite thing is to use what I have prepared in a number of fashions. The roast pork can go into chinese, or creole cooking. I make a pork or chicken creole dish with onion, celery and green pepper, red sauce and cayenne pepper that goes well over scoop of white rice. BUT, I may not be alone that once and a while, I will eat a good hot dog for lunch and nothing beats a dog with that homemade Kraut and mustard.

Finally, you can get yourself a well baked roll or two and go to town on a pulled pork sandwich. Grab some industrial barbeque sauce, mustard, catsup, white vinegar, worcestershire sauce, and a bottle of hot sauce. Get a small saute pan up to heat and put a small amount of canola oil into the pan. shred up some of your left over pork shoulder roast and drop it into the pan. grab a bit of water in a glass and hold that to the side. The most important ingredient in my book is the vinegar. Pour in a table spoon. Net some BBQ sacue and toss the dish to start coating all the meat. I like worcestireshire sauce flavor on pork, so that's what I might do net. If, at any time, the pan starts to dry out the sauce, hit it with a bit of water and stir it all up. Use your catsup, mustard  and hot sauce to get the desired flavor. When you are happy with the flavor, cover the pan after adding a bit more water and let it cook down on a lower heat for 5 minutes. That gives you time to put everything away and get your roll ready on a plate. If you happened to have a bit of cole slaw, even better!

So what the frick is the point of all this? You give some poor people a can of SPAM and they no how to cook? You will get Da kine food make you wanna lick da fingas.

(For me, I would love some Shoyu chicken right now--that, and a bowl of rice. A solid breakfast to get me through the day.)

If you are married and your wife is conditioned to leave the house at 10 am to shop and otherwise hang with her friends until about 6 pm and you have this meal waiting for her when she gets home, only one thing will be on her mind.... "It must have been a bye week and he didn't realize it!"

In truth, the recipe calls for you to watch two complete football games while you wait. That's what slow cooking is all about.
